We had this delicious bean salsa and wanted to share! There are several different variations of this recipe online, but this is the winner in our book. It is one of those dips where simplicity is key. It takes no time to make which is perfect for vacations or summer parties. Nobody has time to slave over a kitchen when the sun is shinin! Add a little more nutrition by serving with carrot chips and sliced zucchini. Enjoy!


1 can of corn

1 can of black beans

1 can of pinto beans

*Drain and rinse beans

5 roma tomatoes, seeded and chopped

1 bell pepper, seeded and chopped

½ red onion, chopped

½ cup of olive oil

½ cup of vinegar

½ cup of lime juice (3 limes)

1 large or two small avocados, chopped

2 tablespoons of chopped cilantro (we used one bunch chopped in food processor)

Garlic powder to taste

Cayenne pepper to taste

3 tsp sugar (we used Stevia)

Combine all ingredients and let marinate in the refrigerator for a couple of hours before serving!
