You have to get your veggies in somehow! Here is a twist on traditional mashed potatoes. Cut out the carbs and give this recipe a try! This makes for a great side dish. Enjoy!

Ingredients:

1 large head of cauliflower (broken into florets)

1 heaping cup of original almond milk

2 tablespoons of earth balance coconut butter (could use regular earth balance butter if needed)

A little less than 1/2 cup of Marinara sauce 

Salt and pepper to taste

Dash of red pepper

 

Preparation:

Steam cauliflower until very soft (*can steam in rice cooker)

Once cauliflower is steamed, heat medium sized pot on low heat

Drizzle olive oil on bottom of pot

Pour cauliflower and almond milk in pot and begin to stir

Then add 2 tablespoons of earth balance butter and continue to stir for a few minutes.

Add marinara sauce and seasonings

Stir mashed cauliflower until all of the ingredients are completely mixed together!
