There is nothing better then an early Sunday morning with a freshly brewed cup of coffee, sun shining through the windows, and a warm decadent breakfast treat.  We recently baked a chocolate bundt cake, and it was absolutely delicious. We, of course, are biased so we decided to put it to the test to get some true criticism.  We served it to several of our friends, and they all gave excellent reviews! We think we may have found the perfect chocolate cake…for us, at least. We don’t know if it was the texture, the melted chocolate chunks, or the perfect amount of sweetness, but this cake has quickly become one of our favorites.     One thing we love about this recipe is the simplicity of it. There are no unfamiliar, hard to find ingredients. It is great as a morning pastry with a cup of coffee or as an after dinner dessert. It isn’t too sweet and the ingredients are not awful to where you feel guilty for indulging. This is a must try dessert! It is too easy not to be. And of course, like all of our recipes, it is totally egg and dairy free. You have our permission to get your hopes up about this chocolaty goodness…it will not let you down!

Ingredients

  • 2 ¼ cup all-purpose flour
  • ½ cup Ghirardelli Chocolate Baking Cocoa unsweetened
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 1 cup warm coffee
  • ½ cup plus 1 tablespoon Canola oil
  • ½ cup of dairy free chocolate chunks (you can add more if you prefer it extra chocolaty)
  • Optional-chopped walnuts or pecans

Preparation: 

Preheat oven to 350 degrees.  Grease a 9-inch Bundt pan with baking spray and dust with cocoa powder.  Mix together flour, cocoa powder, sugar, baking soda, baking powder, and salt in a large bowl and set aside. In a separate bowl, whisk together coffee, canola oil, and vanilla extract.

Combine wet and dry ingredients and whisk until combined.  Stir in chocolate chunks and nuts, if using.

Pour the batter, which will be thick, into the bundt pan.  Bake for about 35 minutes.  Insert a toothpick into the center of the cake and if it comes out clean you know it’s ready.

Take out the oven and let cool for about 10 minutes.  Lastly, sift powdered sugar on top.
