Several people do not attempt to cook because they think it is either too time consuming or too difficult. We are not denying this fact. Sometimes cooking is extremely meticulous, but there are exceptions. One exception we would like to bring to your attention is THE CROCK-POT. It is easy to use and very convenient. You can throw all the ingredients in and let it cook for hours while you are in class, at work, or just running errands, and it will shut off once the time is up. How much easier can it get? We have a delicious recipe that can make three different meals. Black eyed peas, large or small lima beans, and red beans all call for the same ingredients. You can cook up a batch of brown rice to put the beans on top of or you can leave the rice out. Regardless, this will be a delicious, convenient dinner.      Beans are extremely time consuming to cook on the stove, so take our advice and invest in a Crock-Pot. It will be put to good use, we promise!


  • 1 pound of beans (your choice of either black eyed peas, large or small lima beans, or red beans)
  • 3-4 cups of vegetable broth
  • 1 onion, chopped
  • Olive oil (about 1 tablespoon)
  • Jalapenos (about two tablespoons chopped)
  • Tabasco (about 1 tablespoon)
  • Salt and pepper, to taste
  • Cayenne pepper, to taste
  • 1 tablespoon Garlic (minced)


Sauté chopped onions until golden brown, add in minced garlic and let cook together for a couple minutes

Place beans in crock-pot. Pour vegetable broth over beans until the liquid is about 2 inches above beans. Add Tabasco, salt, pepper, cayenne pepper, chopped jalapenos, and garlic and sautéed onions. Let cook for 6-8 hours. May need to add water as the vegetable broth absorbs and thickens. Easy as that!
