Over Spring Break we were spending time with our cousins and they made these delicious No Bake Energy Bites. We’ve heard several different varieties of this recipe and we can’t wait to experiment with more variations. Peanut Butter is our favorite and without constraint we could probably knock out a full jar. Maybe that is why these were so delectable to us. They were the cure to our sweet tooth and the best part about it was all the nutrients that came packed in these tasty bites. Another great thing was the simplicity of preparing these sweet treats. No bake, no hassle! Below is the recipe we have tasted (so we are SURE they are great) but just know you can mix it up however you want! Caution: You may find yourself eating 4…5…or 20 of these energy bites. Trust us when we say, they are too good to stop!
- 1 cup (dry) oatmeal (old-fashioned oats, steel cut oats, etc)
- 2/3 cup toasted coconut flakes
- 1/2 cup peanut butter
- 1/2 cup ground flaxseed or wheat germ
- 1/2 cup dark chocolate chips
- 1/3 cup honey
- 1 tsp. vanilla extract
Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour (you can skip this step if you need). Next, roll into balls of whatever size you would like. Store in an airtight container and refrigerate. These will stay good for about a week when refrigerated. This should make 20-25 balls.
