Springtime is finally here. Days will soon be full of sunshine, pool days, and sweet watermelon. It may just be our favorite time of year. There is nothing better then waking up early and going to the Farmers Market together. While the city is still sleeping, we are excitedly stocking up with our favorite fruits and vegetables to keep us happy all week. Pasta salad is always an easy, delicious, and refreshing springtime meal. We have an easy recipe that can be made a bunch of different ways. Check out the recipe below to see how we made ours. Omit some ingredients or just add to what we have. You can’t mess up a dish like this!  


  • 8 oz box of pasta of your choice (we used Brown Rice penne pasta)
  • 1/2 head of cauliflower-chopped/lightly steamed (want to keep some crunch)
  • 3 cups fresh broccoli florets-lightly steamed (want to keep some crunch)
  • 1 container of cherry tomatoes- sliced
  • 1 cucumbers-chopped
  • 1 avocado- chopped
  • 1 red bell pepper-chopped
  • 1 cup of peas
  • 1 cup sliced mushrooms
  • 1 can chick peas (rinse and strain)
  • 1 small can of sliced black olives
  • ¼ cup Pesto Sauce
  • Olive oil to taste
  • Lemon juice to taste
  • Salt
  • Black pepper
  • Red pepper
  • Garlic powder
  • Greek Seasoning
  • Dried Mint



Boil pasta and drain. Combine all ingredients and mix. Let chill for at least a couple of hours before serving.
