Sunday is by far our favorite day of the week. Our fondest memories from growing up revolve around family lunches on Sundays. We come from a huge, Lebanese family who loves to be together and eat…a lot. Many of our family traditions take place around the dinner table. Birthdays and holidays are all celebrated with siblings and cousins and an out of this world, over the top, delicious menu. The more the merrier. We absolutely love our family. The size, the food, the laughs, and the love. It makes us who we are.
As we started to implement healthier options into our diet, one goal of ours was to keep Lebanese food a staple. We could never give up our favorite meals we grew up on! Below is a delicious recipe that is SUPER easy. Serve with a salad and you have yourself a perfect dinner!
M’Jaddarah (Lentils with Brown Rice)
Rice Cooker Recipe (10 cup rice cooker)
- 3 cups of lentils
- 1 ½ cups of brown rice
- 4 cups of vegetable broth
- About 5 cups of water
- 3 purple onions
- ¼ cup of Olive oil
- Cayenne pepper
- Black pepper
Brown onions in skillet until brown
Add lentils, brown rice, water, vegetable broth, and all ingredients in a 10-cup rice cooker (broth has sodium so not put too much salt)
Let cook. When rice cooker dings, and the rice and lentils are cooked, allow to steam for about 15-20 minutes.
*We find with brown rice it cooks better in the rice cooker
